I'm not terribly adventurous when it comes to cooking. I don't hate cooking but I don't LOVE it either. There are some times when trying to figure out what to cook is so annoying that I just with that we could go all Jetson's style and down a pill.

I'm looking forward to the day when Ruby can suggest things for dinner. (you can remind me I said this in a year or so when I'm blogging about how Ruby only wants to eat _______ ) Often times I'll ask Heath, "What do you want for dinner?" and he'll say, "I don't know, whatever you want" but that's the problem! I don't KNOW what I want! Okay, well actually I'd love to have some Nagasaki's, some Masala or maybe some Sahara but you can't eat like that every day! Besides being expensive Ruby would just not allow it! You can imagine that as a 2yo she's so much fun to deal with in a restaurant. 
As annoying as I find meal planning I do try to make something new as often as I can. AllRecipes, and Epicurious are sources that I use all the time to find something new to make. Pinterest doesn't have the greatest track record so far but I get a lot of my recipes from there. I still have some go-to meals (spaghetti, enchilada casserole, Trader Joe's frozen Indian food) but last night I made 'my' chicken lasagna with broccoli and mushrooms:

 I'd like to thank the fine folks at Kroger for this recipe which I took off the back of a bag of mozzarella and have tweaked over time. 

Chicken Lasagna with Broccoli and Mushrooms
Ingredients: 
9 lasagna noodles (I've made lasagna so many times in this Pyrex dish that I know exactly what it takes)
Chicken (I usually buy a rotisserie chicken and strip it. I end up using about 3/4 of the chicken and save the rest for another dish)
2 cans Cream of Chicken Soup (or 1, if you don't like your lasagna as saucy as we do)
Milk (enough to fill one can from the soup)
1 container of mushrooms, sauteed in butter ('cause that's how I roll)
1 bag steamed broccoli bits
Cheese (whatever's hangin' around, I usually end up using around 5 cups)

Real precise, right?

Instructions:
1. Cook the noodles as desired.
2. Empty can(s) of soup into a bowl and mix in one can of milk making it into the sauce.
3. Saute mushrooms in butter.
4. Steam broccoli in the microwave. Don't burn yourself taking it out of the microwave. Drain the excess water out of the bag and set aside. 
5. Layer that lasagna however you'd like. Sauce-noodle-toppings-cheese, noodles-sauce-toppings-cheese, however ye please. It all tastes the same in the end! 
6. Pop in the over @ 350º for 30-40 minutes. Take out (don't forget potholders!), let cool, enjoy, and eat of it for the next three days. 

Boom. There ya go. Dinner. Is. Served.

That looks intriguing. I've never had much success with chicken lasagna, but I might have to give this a try.

You've seen my pins, so you know that lately I've been finding most of my recipes there (and thankfully I've had several successes). Quite often I will use the pinterest recipe as inspiration, and tweak it to suit our tastes and my skill level. I also find a lot on Allrecipes, Rachael Ray, and Pioneer Woman. And magazines! I love foodie magazines.

Late to the conversation, but I had to speak on two things

1. Have you tried the no bake noodles? They are awesome and quick. I usually make 2 pans at once, pop on in the freezer uncooked and cook the other immediately. Never had a problem with those noodles and love not having to deal with the cold wet noodles. I think I use this brand: http://www.barilla.com/content/product/oven-ready-lasagne

2. I tried a Pinterest recipe the other night and we loved it. Pretty easy, although messy to prep. And everyone loved it. I added a lot of green peppers, carrots and pineapple chunks. Next time I'll add broccoli and onion too. It was great served with white rice.

I have not tried them-only because "no bake noodles" brings back memories of one of my moms awful attempts to cook. I suppose I should look past that though :)

Thanks for the link to that recipe, I'll give it a go!
